Summer Day

It's beautiful and warm in Western Washington.  Too warm for using the stove for too long.  You may be one of those lucky ones who have an abundance of fresh chicken eggs.  We don't have any eggs from our little flock yet, but we are hoping soon.

Here's great family recipe that we love anytime of year.

Crock Pot Tapioca Pudding
½ cup tapioca pearls, non instant
6 cups milk
1 Tablespoon vanilla
1 cup sugar
6 eggs, separated
Place tapioca, milk, vanilla, sugar & egg yolks into greased crock pot.  Using a whip, blend completely.  Cook on low for 6 to 8 hours.  Whip egg whites into firm peaks and fold into pudding.  Cool and serve. Great with some freshly whipped, sweetened cream.

I have been spending more time with grandchildren and three of them have recently moved with their parents to WA.  It is so much fun!
