Garden Busy....Strawberries and More
Strawberry Cream Dessert for our hard working rewards. We have been so busy with gardening, yard clean-up, organizing food storage, etc. that we all got the blessing from the "fruits" (strawberries) of our labors.
This recipe starts by making Yogurt Cheese with 1 quarts of plain yogurt. Place yogurt into double cheesecloth (or cotton fabric), tie knots at the corners. Hang on cabinet knobs over colander inside of a bowl. Let hang overnight to release the whey. Reserve the whey in refrigerator for bread, sauerkraut or animal feed.
Make easy crust with: 1 package graham crackers, crushed
1/3 cup butter, melted
1/4 cup sugar
Mix and press into 9 X 13" pan.
Place strained yogurt, that is now Yogurt Cheese into mixing bowl.
Add: 1/2 cup white sugar and 3 cups pureed, fresh strawberries. Mix well and spoon onto crust.
Whip 1-pint heavy cream. Add; 1 teaspoon vanilla and 1 cup powdered sugar. Carefully place on top of strawberry cream layer.
Place 3 or 4 cups of fresh, sliced strawberries on top. Refrigerate and serve.
