Hail & 10 Pounds of Chicken

October 20th, what a weird day...we had a hail storm that lasted
over 30 minutes and in that time our yard was white.

At the Frugal Feasting I told about buying a 40 pound box of boneless, skinless chicken thighs that has 4 -10 pound bags in it. Some wondered what to do with all that chicken.
This chicken was baked and separated. Two ziplock bags went into the freezer for casseroles, salad or BBQ chicken. We had enough for our dinner topped with an awesome sweet & sour sauce that I made from http://www.animalvegetablemiracle.com/Relish.pdf So yummy with steamed brown rice and sauteed carrots, the last zucchini, and a cabbage from the garden.

The picture is in the raw to show that 10 pounds will fit into large steamer pans. The measuring cup in the middle is 1/2 cup.
