Better Than Almond Joy Bars

Here's a recipe for some real, "party food". Emily and I have been thinking over how to make an Almond Joy Bar cookie. There were no recipes, so here's our version. Scott says they are better than Almond Joy Bars, thus the name. Enjoy!


Better Than Almond Joy Bars
This makes 2- 9X13" pans. One to eat, one to give away or freeze.

-Roast 1 - 10 or 12 oz. package whole almonds. Cool and chop. Divide into half, reserving one half for 1st layer and the other half for the topping.

1st Layer - Brownie
Place into mixing bowl;
6eggs

1 cup butter, melted

1/2 cup oil
4 cups sugar

1 tablespoon vanilla

3 cups white or wheat flour
1 1/2 cups cocoa 2 teaspoons salt
Mix well. Grease 2 - 9X13" pans. Divide into pans. Sprinkle with almonds. Bake at 350' for 20 to 25 minutes, until the brownie is slightly firm.

2nd Layer - Coconut

2 - 5 oz. cans sweetened condensed milk

1 tablespoon vanilla
4 cups powdered sugar

4 cups coconut
Place into mixing bowl and stir well. Divide and place into each pan, spreading to cover 1st layer.

3rd Layer - Chocolate
Sprinkle each pan with 1- 12oz. package semi-sweet chocolate chips.
Place in 350' over for 7 minutes. Using a butter knife, spread chocolate chips to evenly cover the coconut layer. Sprinkle with reserved roasted almonds. Cool and cut into bars. Enjoy!
